    I was pleased with the crunch!
    Quite right! If you want the syrup to be softer, stop the cooking at a lower temperature. There are 6 stages ranging from ‘thread stage’ that can be poured over your ice cream, through to ‘Hard-crack stage for making brittle candy.

    When I was given this recipe I asked the same question & was told: “the vinegar is acidic-it is needed to help the sugar boil properly & form the correct crystalline structure”

    That’s a good idea, I am not sure if I will get enough time for this Haloween this year. Maybe for next year I will do a series :)
    Although with so many pumpkins, I should consider making a pumpkin soup :)

    Use white wine vinegar, cider vinegar or one called distilled vinegar

    Ingredients:

    12 to 15 eating apples – Castor sugar 4 cups – Cold water 2 cups – Vinegar 1 teaspoon – Food colour of your choice 2 teaspoons if using liquid version –
    Wooden chopsticks or lolly pop sticks – Greaseproof paper – Ground Cinnamon if you want to add a Christmas flavour to the candy.
